A2 Gir Cow Ghee Making Method:
It takes around 25-30 litres of Gir Cow Milk to make 1 litre of Ghee. There are 5-steps involved in making authentic A2 Desi Cow Ghee from Pure A2 Cow Milk.
Step 1: Boiling Raw A2 Milk
Fresh raw Gir Cow A2 milk is boiled over wood fires and cooled at normal room temperature.
Step 2: Setting up the Curd
After the first step of boiling milk, a spoonful of existing curd is mixed in the milk and then kept in a warm place overnight to form curd in a clay pot. Once the Curd is all set, we keep it in a cool place before the churning process.
Step 3: Churning of the Curd
Then the curd is hand-churned with a wooden churner. The method is traditionally called ‘Bilona’ to extract the butter. Once the curd gets separated into Butter and Butter Milk, we get the Makkhan.
Step 4: Heating the Makkhan
The separated Makkhan obtained in the hand-churning process is sent to the heating process in a thick iron vessel on a mild wooden flame. This process is where all the water gets evaporated. Once the butter starts becoming clear, there is a visible layer of solids at the bottom of the pot. Now the ghee is almost ready. It will start emitting a pleasant aroma once it becomes ready.
Step 5: Packaging
Finally, the golden liquid ghee is strained and stored in steel cans. Now, it’s time for our ghee sample to go through laboratory tests to ensure the best quality. After that, it gets packed in glass jars.
Pure A2 Desi Ghee is now ready to be delivered all over India.
